Pineapple Shrimp Skewers
1.5 Pounds – Large Shrimp, Raw, deveined
¼ cup Mild Harissa Sauce
1 Package, 4 Links- Pineapple Sausage (I use Evergood brand)**
½ yellow onion, large dice
1 small fresh pineapple, large dice. (Or 1-16 oz can)
2 red bell peppers, large dice
3 tablespoons of melted butter or Olive oil
10-12 skewers depending on size.
Optional: Sweet Thai Chili Sauce for dipping.
1. Completely thaw shrimp and drain excess liquid. Add Harissa sauce and let marinate for 2-3 hours. If using wooden skewers, let soak in water while shrimp marinates.
2. Cut sausage into large chunks and have all ingredients ready to assemble.
3. Get skewering! There’s no right way, whatever looks good to you!
4. Preheat grill and clean grates.
5. Brush skewers with butter or oil and season with salt and pepper. Grill on medium heat for about 10 minutes. Do not overcook shrimp!
Best served over coconut jasmine rice and sweet thai chili sauce for dipping.
**If you are using a different sausage, make sure to not use raw sausage. Buy links that are already cooked and just need reheating. Raw sausage takes longer to cook than the shrimp, which could leave you will rubbery, chewy shrimp.
